Hello and happy October! I think this is truly my favorite time of year. The days are bright and crisp, and the light turns golden, and I start to think about making all my favorite cozy foods. 

Up this week is one of my favorite chili recipes. It uses ground chicken so it’s a bit lighter. When I’m not quite ready for a heavy beef chili, I make this. My kids love it because it’s not spicy although you could make it spicier if you choose. Swiss chard gives it some healthy greens, and it taste great with cornbread or tortilla chips. 

Also, this week I’m sharing my favorite apple crisp recipe. Whenever my family goes apple picking I come home and make this. It takes a little bit of effort to peel, core and chop apples, but this is worth it. The oatmeal topping makes it nice and crispy, and it tastes phenomenal with vanilla ice cream. I hope you make it with some beautiful fall apples!
